Fluffy vegan cinnamon buns. Not much can beat this simple and delicious recipe. Soft and fluffy yeast dough, sweet-cinnamon apple-nut filling and creamy cream cheese frosting. These homemade cinnamon rolls are easy to make and taste (and smell!) so good! Perfect as a sweet breakfast or delicious dessert!
When it gets colder outside, I like to throw in the oven – and kettle – inside. A warm cup of tea, cuddly sweaters and something home-baked to enjoy. I try to live the motto “Let’s make the most of it” and in this way it works out pretty well to get the most out of the cold and dark days.
I really like baking with yeast dough! It takes a little more time (and strength in the hands ;-)) … unless you have a kitchen machine), but a yeast dough is easy to make and definitely worth it. Especially with cinnamon rolls!
Vegan cinnamon buns. Fluffy. Cinnamony. Juicy-sweet filling. GORGEOUS!
I decided on an autumnal / winter filling: apple nut. I cooked the filling with cinnamon, date syrup and vegan butter in a pot. The filling is soft and juicy, cinnamony and sweet and a perfect complement to the fluffy yeast dough.
You can also vary the filling to your taste.
To the cinnamon buns I recommend you a frosting. I’ve prepared a vegan cream cheese frosting here, which “refreshes” the cinnamon buns. Alternatively, I can recommend you my vegan vanilla sauce. I’ve served them for Christmas to the Cinnamon Buns and it was so good!
The vegan cinnamon rolls are also super juicy and aromatic without frosting and vanilla sauce!
The preparation is super easy:
First prepare the yeast dough and then let it rise for 1 hour. Meanwhile, prepare the filling. Then roll out the yeast dough, distribute the filling evenly over the dough, roll it up again and then cut into pieces.
The cutting works best with a sharp knife or string. To do so, place the string under the roll, take both ends in your hands and then pull together crosswise so that the string cuts through the dough.
Then allow to rise for another 30 minutes and then the cinnamon rolls are allowed in the oven. You will see (and taste): the wait is worth it!

Vegan Cinnamon Buns with a sweet apple-nut filling and cream cheese frosting
Ingredients
Yeast dough
- 250 g flour
- 40 g coconut blossom sugar*
- 2 tsp cinnamon
- 1 pinch of salz
- 125 ml vegan milk
- 25 g vegan butter
- 1/2 cube of yeast
- 1/2 tsp vanilla extract
Apple nut filling
- 2 tbsp date syrup*
- 2 tsp cinnamon
- 2 tbsp vegan butter
- 2 small apples cut into small pieces
- 50 g nuts chopped
Cream Cheese Frosting
- 150 g vegan cream cheese
- 50 g vegan butter
- 200 g powdered sugar
- 1/2 tsp vanilla extract
Instructions
Yeast dough
- Mix all the dry ingredients for the yeast dough.
- Heat soy milk with butter and dissolve the yeast in it. Add the vanilla extract, stir well and add the yeast milk to the flour mixture.
- Knead for 10 minutes to an elastic dough and then cover it* and let it rest for about 1 hour in a warm place.
Apple nut filling
- In the meantime prepare the filling. For that, warm the vegan butter, cinnamon and date syrup in a pot.
- Then add the small cut apples and chopped nuts, stir well and set aside.
Cinnamon buns
- Roll out the yeast dough into a rectangle, distribute the apple nut filling evenly over the dough and roll it up gently.
- Carefully cut the dough roll into pieces of equal size * and place in a slightly greased oven dish.
- Cover the cinnamon rolls and let them rest for another 30 minutes in a warm place.
- Preheat the oven to 180 degrees.
- Brush the cinnamon rolls with soy milk or vegan butter before baking. This will give them a nice color. Then bake in the oven for about 20-30 minutes.
Cream Cheese Frosting
- In the meantime, put all ingredients for the cream cheese frosting in a bowl and mix with a hand mixer to a cream.
- Serve the cinnamon rolls still warm with the cream cheese frosting.
Notes
- If you are exchanging the coconut blossom sugar please note that the consistency of the dough may change.
- Instead of date sweetener, you can also use another syrup or sugar.
- I always use a damp cotton cloth / tea towel here. Due to the moisture, the yeast dough does not dry out.
- This works best with a sharp knife or string.
