Vegan Cinnamon Crêpes with Baked Apple Filling

Vegan crepes with cinnamon and a sweet filling with caramelized apples. The crêpes are easy to make and you only need 5 ingredients and a pan! Perfect for a delicious breakfast or quick dessert!

Vegan cinnamon crêpes | simple and healthy

Crêpes are one of my favorite recipes! They remind me of my childhood and the recipe possibilities are endless! As a child I loved to eat crêpes with homemade strawberry jam. SO GOOD!

And they are also prepared quickly and easily. In autumn and winter I like to serve it with baked apples. You can enjoy it as a sweet breakfast or as a dessert. Although it’s hard to believe – this recipe is actually quite healthy!

The crêpes are made of flour, vegan milk, sparkling water, cinnamon and a pinch of salt. Due to the sweet baked apple filling you do not have to sweeten the crêpes. If you want, you can add  coconut blossom sugar to the crêpes dough. Coconut blossom sugar has a slight “caramel” taste – i love this!

Sweet baked apple filling

For the sweet and cinnamony baked apple filling you only need small diced apples, a dash of water, erythritol and cinnamon. Erythritol is a sugar substitute with no calories. Since erythritol also caramelized, it is great for the baked apple filling. Instead of erythritol, you can also use sugar, brown sugar or a syrup. I love the taste of maple syrup!

Vegan Cinnamon Crêpes with Baked Apple Filling

Ingredients

Vegan cinnamon crêpes

  • 150 g flour
  • 150 ml vegan milk
  • 150 ml sparkling water
  • 1 tsp cinnamon
  • 1 pinch of salt
  • 1-2 tbsp coconut blossom sugar optional

Baked apple filling

  • 2 small apples cut into small cubes
  • 1 tsp cinnamon
  • 1 tbsp erythritol*
  • dash of water

Instructions

Vegan cinnamon crêpes

  • Mix all ingredients for the crêpes to a liquid dough and let it rest for 10 minutes.
  • Heat a pan (optional with a little bit of oil).
  • Using a ladle, place the batter in the pan until the oan bottom is thinly covered and fry for 30 to 40 seconds.
  • Then gently turn the crêpes and bake for another 30 seconds and remove from the pan.
  • Continue until the dough is used up.

Baked apple filling

  • Add the sugar of your choice, cinnamon and a dash of water to the oan and heat until the sugar melts.
  • Add the diced apples and saute until the apple pieces are soft and caramelized.
  • Then spread 1-2 tbsp of the baked filling on a crêpes and roll it up.
  • Serve the finished crêpes with the rest of the filling and optional some maple syrup and nut butter.

Notes

  • Instead of erythritol you can also use sugar, brown sugar or a syrup like maple syrup.
